Mondays

Pin It Now!      What a wonderful weekend we had, we went to our sweet nieces 2nd birthday party. Bennett basically had a 48 hour play date with his cousin Seanna. They are about 7 months apart so they play very well together and it's always a good time. With traveling on the weekends comes a really crazy Monday. My to-do list is always about a page long and usually only a few things get done. Usually the most important things we do are run around the house in our pjs and play, a grocery store trip with a very cute helper, meet up with friends for some quality playtime, and make a meal that will give us lots of leftovers. If more than this gets done great but if not o well. I love my time with B and this age is so fun! This week we decided to do a super simple Roasted Chicken. I use extra veggies in this recipe so we have at least one side dish for the whole week.


What you need
1 Chicken (3-4lbs)
1lb bag carrots
4 medium potatoes
1 yellow onion
4Tbsp butter
1Tbsp garlic powder
1tsp salt
Black Pepper
dutch oven 


                                       What To Do    
1. preheat oven to 350 degrees
2. cube potatoes and place in oven
3. peel carrots and cut each carrots into 1" pieces,put in dutch oven
4. cube onion and put in dutch oven
5. spread out chucks of butter throughout veggies (I use about 2Tbsp doing this)
6. Season with pepper, and garlic powder, stir
7. Place the whole chicken on top of veggies,
if the top won't go on you can also put veggies around chicken
(Drummies point up and tuck wings under the chicken)

8. Spread remaining butter and seasoning over chicken
9. cover and place in over for 1hr 45min-2 hours
10. Serve!!!







All done and ready to enjoy!! 

     I have learned that Mondays are great for roasting things or breaking out the old Crockpot. It gives me more time to be playing and learning with Bennett. As this pregnancy is progressing I'm busy soaking in all of these only child moments that I have left.
