Pineapple Coconut Cashew Bars

     Hi everyone! What an awesome long weekend we had. I hope you all did too! We stayed in town and really just had some quailty time together. As many of you know I have a husband that travels a lot so for him to be home with us for four days was quite the treat. We did hit a few online labor day sales and made our way to Target and picked some thing up for the new baby. I've never found deals there like we did this weekend.

     Another highlight to the weekend was all the cooking that we did. I think ever appliance & gadget was used multiple times and we must have done dishes a thousand times. We are stocked up on food for the next couple of weeks so it was all worth it.

     I was in the bulk section on Earth Fare Friday and ran across some dried unsweetened pineapple. I went ahead and picked some up thinking they would make a yummy addition to a new coconut cashew bars I was going to try and put together. What I came up with is a hit with the whole family. I hope you all enjoy too!

Pineapple Coconut Cashew Bars
what you need:
1/3lb dried pineapple 
(unsweetened if you can find it)
3/4lb dried pitted dates
1/4c dried shredded coconut
1/3c chopped cashews
1/2tsp vanilla

what to do:
1. in a food processor chop pineapple into fine pieces, set in mixing bowl
2. in a food processor chop dates in fine pieces or until it forms a ball, set in mixing bowl 
3. run cashews in the food processor to chop into small pieces if desired, set in mixing bowl
4. You should now have pineapple, dates and cashews in the mixing bowl. add remaining ingredients
5. with WET hands mold ingredients into a ball 
6. place ball between 2 sheets of parchment or wax paper (about 10" long) 
7. roll out flat with a rolling pin. (you can also roll this out on a cookie sheet or cutting board, I use the paper because the mixture can be sticky
8. place in fridge to chill then slice and serve! 






**Allergy Info: These are naturally gluten, egg and dairy free. although they do not contain peanuts you must read the label on your cashews to see if they were made in the same factory
