Cauliflower Pizza Crust (Dairy Free)

     Let me start by saying I love pizza, love as in it's in my top 5 favorite foods. Especially crispy thin crust pizza. I also love adding extra veggies to our diet so when I heard about the cauliflower pizza crust I knew it was a great option for us. I looked up lots of recipes and honestly they all had dairy so I had to come up with a dairy free option. It tastes great! The crust turned out so full of flavor that we actually slice them into sticks and just eat them plain or dip them in marinara. I call those garlic sticks.


     These crust freeze wonderfully! You can freeze them as just a crust or as a whole precooked pizza. I recommend making them personal size, about 6-8" in diameter. that way they freeze easily and are a perfect size for everyone. The adults might eat 2 each but the fun part of that is you can use lots of different toppings.

      These are a little time consuming to make but I promise they are well worth it!


Cauliflower Pizza Crust
what you need: 
1 head of cauliflower
1/4c almond flour 
1egg
1tsp garlic powder
1/2tsp dried oregano
1/2tsp dried basil
1TSBP olive oil
pinch of pepper
pinch of salt
pinch crushed red pepper

What to do:
1. preheat oven to 425 and place baking sheet inside.  
2. Wash and dry cauliflower. Run florets over a zester or the smallest thinnest side of your cheese grater. This will make your "flour", you want it to look kind of like rice. 
3. Microwave  cauliflower rice for 4-5 min. 
4. Place "rice" into a cheese cloth and ring out all of the excess water. Get it as dry as possible, if you having a hard time that's okay you can always add extra almond flour. 
5. Put cauliflower rice into a mixing bowl. Add almond flour, garlic powder, oregano, basil, pepper salt and red pepper. Using your hands mix together. 
6. Add egg, and continue mixing with your hands. 
7. If dough feels soggy add 1 tsp of almond flour at a time, until dough feels wet but not soggy
8. split dough into 2-3 pieces and on an oil sheet of parchment paper press each piece of dough into a 1/3" thick pie. Do this to all pieces. 
9. slide parchment paper with pies onto hot baking sheet and place in oven. Cook for 7-10 min until golden brown, edges might be slightly more brown. 

10. Flip each pie over and cook for an additional 5-10 min. Watch closely because it will turn dark brown very quickly. It really depends on your oven, after cooking this pizza crust a few times you will get a handle on the timing. 
11. take golden brown pizza crust on the baking sheet out of the oven. Turn oven down to 400. Add all of your toppings to crust and put back in the oven for 5 min until cheese is melted. Make sure you cook all meat toppings before hand. Once cheese is melted, take out and enjoy!! 

Like I said before this takes a little bit of time, but is well worth the effort you put in. Also every time I have made this I get faster and faster. It not only takes me about 15 min to prep the crust and since we use veggies cheese and goat cheese for our toppings we don't have to prepare meat toppings and that of course saves on time.
