It has dawned on me recently that I have learned to cook brunch really well. However I think it is time to move on to lunch and dinner. The best part about most dinner recipes is that they make wonderful leftovers for work lunches. These days the baby is CRAVING Mexican, so I rummaged through Pinterest and found some good ideas. I've put together these Easy Cheesy Chicken Taquitos, and my husband voted them the best dinner I have ever made!
Easy Cheesy Chicken Taquitos
what you need:
1lb. Chicken Breast
1 package plain cream cheese (full fat, room temp)
1 small can green chilies (diced)
1/2 white onion (diced)
3Tbsp Chili Powder
3Tbsp Garlic Powder
2tsp Cumin
1 can Pinto Beans (rinsed and drained)
2c shredded Pepper Jack Cheese
1c Shredded Sharp Cheddar
1tbsp butter to grease your skillet
small corn tortillas (this makes about 25-30)
What to do:
1. In a mixing bowl combine cream cheese, chilies, onion, chili powder, garlic powder, cumin & water. Mix together
2. Put chicken in your dutch oven or crock pot and pour mixture over chicken. Set on low temperature and cook for 4-6 hours, until tender.
3. When chicken is cooked, using 2 forks pull and shred chicken into thin pieces.
4. Add your pinto beans and stir. Turn off crock pot
5. preheat your oven to 400, line a baking sheet with parchment paper
6. melt a little butter in a hot skillet. place tortilla in skillet and put a little cheese on top. Cook until cheese is melted. You can skip this step but having the tortilla cooked with cheese will help hold it together while wrapping mixture.
7. Take cooked tortilla (still soft) and place about 1Tbsp of your chicken mixture inside, and wrap. Place wrapped Taquito onto a parchment paper lined baking sheet. secure with a toothpick if you need to

8. Repeat this until you have used all of your mixture.
9. Brush Taquitos lightly with olive oil to help with browning.
10. Cook in oven for 10-12 min until golden brown. Serve with fresh salsa, avocado and sour cream. For the adults in your house a glass of white wine will go really well with it too.
I will admit when I first started this project I thought it would be very tedious and time consuming. I was very wrong. Total hands on time was about 25 minutes. For a dinner this delicious it is totally worth it, I promise. The other good news is, these freeze very well. To reheat either microwave or stick them in the oven for about 5-10 minutes. This is a great way to knock out making dinner and extra lunches for a few days.
