Snacking on a Saturday

Pin It Now!         Today it is wet and rainy. It means that we are spending the whole day inside and making the house a mess. So I think it's a great day to try out some yummy new snacks for the babes. Now that Bennett can feed himself I'm always trying to come up with nutrition packed meals made up of finger foods.
Sweet Potato Chunks
what you need:
1 sweet potato 
2 Tbsp liquid Coconut Oil
cinnamon (optional) 


Directions
Preheat your oven to 350 degrees. Wash and scrub your sweet potato. Cut ends off and trash them. Cube the rest of the potato into 1" chunks. Put in a medium glass bowl. Drizzle melted coconut oil over sweet potato and toss. Place on baking sheet and back for 30-35 min until soft. When you remove from the oven you can sprinkle a little cinnamon on top if desired.  Let cool and serve. 

This will store well in the fridge for up to 3 days. To reheat just place in a bowl and microwave for 15 seconds to take the chill out of the potato. Or just lay out for 20 min to serve at room temperature.
